Sweet Guliappa or Banana Guliappa Recipe | Festive Recipes | Traditional Recipes of Udupi

With the festival of lights – Diwali just gone, it brought in lot of freshness and excitement in the days to come. It is usually a marathon of recipes in every kitchen of India.

I treated my family and guests this Diwali with this festive special recipe – Banana Guliappa. This recipe is traditionally made in many regions of Karnataka, especially Udupi.

The ingredients list is simple and usual, with no special items to remember.
  • 1 cup dosa rice
  • 2-3 spoon urad dal (black gram)
  • 1/4th spoon fenugreek seeds
  • ½ cup grated coconut
  • 1/4th cup powdered jaggery
  • 2-3 ripe bananas
  • A pich of salt

Banana Guliappa Recipe

Wash and soak dosa rice, urad dal and fenugreek seeds together in water for atleast 6 hours.
Drain the soaked water and add all the soaked ingredients in to a blending jar. 

Before blending, add grated coconut and jaggery to the jar. Blend everything all together by adding water little by little.

Do not make a smooth pap like texture. Let the batter feel little sandy in texture.

Pour the batter to a different container and add finely chopped banana pieces. You may add as many banana pieces as you want to increase the softness and sweetness according to your taste.

Add a tiny pinch of salt and mix well. Leave the batter for about half an hour to set well.

Now, heat the guliappa pan under low flame. Guliappa pan has many separated holes to pour the batter in a dumpling shape.

Once the pan is sufficiently hot, grease the pan with homemade made butter and pour the batter into the mould. Pick sufficient pieces of banana too to include in each guliappa.

Close the guliappa pan with a lid to ensure that dumplings bake in steam.

When the bottom side of the dumpling is sufficiently done, flip it so that the other side bakes well too. It will turn golden brown and feel a little crispy.

Though crispy on the outer side, it is still soft from within. That is the fun to enjoy munching!

Serve hot-hot tasty guliappas with some spicy pickle to dip.

There is a huge list of traditional Udupi recipes which needs to be tried one after the other. Festive occasion is just another excuse to try something new. Otherwise, the time for new recipes is always perfect throughout the year.

The authentic taste of dishes, payasa (the traditional dessert), sambar, steam baked dumplings all are hidden in the aroma of coconut.
