Tangy-Spicy-Sweetened Okra Recipe

Okra, did you know that the intake of okra whilst you are carrying helps in the development of the brain of the fetus. I had included okra a lot then when it was my time. Food  & nutrition takes the priority for the birth of a healthy baby.

And since then, it is a habitual routine to add packs of okras into the basket every time I visit the vegetable market or the store. 

Today’s recipe of okra is super interesting and is a healthy vegetarian recipes, it is tangy, it is sweet, it is spicy; a mixture of all form of tastes. :)

Ingredients:
Okra (500 gm)             
Turmeric powder
One lemon sized tamarind lump,
Two lemons sized jaggery piece.
Two spoon urad dal,
One spoon Bengal gram,
Half spoon fenugreek seeds.
One spoon red chilli flakes or 1 medium size red chilli,
Oil for roasting,
Salt as per taste.

Preparation of Okra Indian Recipe:

Chop okra into small pieces. Heat everyday cooking oil in a pan. Once the oil is hot, add all the chopped okra pieces and fry. Stir at intervals. After one minute or so, add turmeric powder.

Fry until the okra gets rid of its stickiness. Keep the fried okra aside.

To the same pan add a little more oil and fry fenugreek seeds, urad dal, Bengal gram and red chilli. 

Once done, add this to a blender, add some water and grind. This makes the masala paste for today’s okra recipe. Keep the masala aside.

Now, in a thick bottomed vessel, add some warm water and tamarind lump. Once the lump softens, squeeze it for the water to get the tanginess. Discard if any indissoluble lump of tamarind.

Heat the tamarind juice.  Once it attains the state of boiling add jaggery. After the jaggery dissolves, add the fried okra pieces and boil for few seconds. 

Then add the blended masala paste and boil for a couple of minutes. Add salt.

This finishes off the preparation of tangy-spicy-sweet okra. Locally this is called as ‘Bende Kayi Rasa’.

This preparation goes well with chapathis, rotis, dosa, idli, and even healthy meal of rice. This is an all purpose okra recipe.
